3 Terminology
3.1 Pure kernel rate: the percentage of the weight of the kernel of the shelled water chestnut seed (of which the imperfect kernels are calculated at half the weight) to the net sample weight. 3.2 Imperfect grains: grains that are imperfect but still have edible value, including the following: 3.2.1 Worm-eaten grains: grains that are eaten by insects and have damaged the kernels. 3.2.2 Broken grains: grains with flattened, broken and damaged kernels. 3.2.3 Sprouting grains: grains with sprouts or young roots breaking through the seed coat.
