The crayfish should come from waters without obvious pollution, and the fishing method should be non-toxic and pollution-free. 3.2 Sensory requirements

Normal vitality and quick response.
The cephalothorax, plastron, chelipeds and walking legs are red or light reddish brown, and the abdomen is white. The body surface is smooth, without attachments, no black dirt or a small amount of black dirt, and the carapace has a good luster. The smell is normal and has no peculiar smell.
The gill filaments are clear, free of foreign matter and peculiar smell, and are grayish white or khaki. See Table 2 for safety indicators of Crayfish.
